Meatless Grain Bowl Recipe

Ingredients:
– 1 cup quinoa, rinsed
– 2 cups water or vegetable broth
– 1 can (15 oz) chickpeas, drained and rinsed
– 2 cups mixed greens (such as spinach, kale, or arugula)
– 1 cucumber, diced
– 1 cup cherry tomatoes, halved
– 1 avocado, sliced
– 1/4 cup sliced red onion
– 1/4 cup crumbled feta cheese (optional)
– 1/4 cup chopped fresh parsley
– 1/4 cup olive oil
– 2 tablespoons lemon juice
– 1 teaspoon Dijon mustard
– Salt and pepper, to taste

Instructions:
1. In a medium saucepan, bring the quinoa and water or vegetable broth to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and let it cool slightly.
2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to make the vinaigrette.
3. In a large mixing bowl, combine the cooked quinoa, chickpeas, mixed greens, cucumber, cherry tomatoes, avocado, red onion, feta cheese, and parsley. Drizzle the vinaigrette over the top and toss to combine.
4. Divide the mixture into serving bowls and serve immediately.
