Old-Fashioned Potato Salad
Ingredients:
– 2 pounds red potatoes, peeled and cubed
– 3/4 cup mayonnaise
– 2 tablespoons Dijon mustard
– 1 tablespoon apple cider vinegar
– 1/2 cup chopped celery
– 1/2 cup chopped red onion
– 3 hard-boiled eggs, chopped
– 1/4 cup sweet pickle relish
– Salt and pepper to taste
– Paprika for garnish
Instructions:
1. Place the cubed potatoes in a large pot and cover with water. Add a pinch of salt to the water.
2. Bring the water to a boil, then reduce the heat and simmer for 10-15 minutes, or until the potatoes are tender.
3. Drain the potatoes and let them cool to room temperature.
4. In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, celery, red onion, chopped eggs, and sweet pickle relish.
5. Add the cooled potatoes to the bowl and gently toss to coat them with the dressing.
6. Season the potato salad with salt and pepper to taste.
7. Cover the bowl and refrigerate the potato salad for at least 1 hour before serving.
8. Sprinkle the potato salad with paprika before serving.
