Ingredients:
– 4 salmon fillets
– 1/2 cup soy sauce
– 1/4 cup brown sugar
– 2 cloves garlic, minced
– 1 tablespoon grated fresh ginger
– 2 tablespoons mirin
– 1 tablespoon cornstarch
– 2 tablespoons water
– 4 cups cooked brown rice
– Sliced green onions, for garnish
– Sesame seeds, for garnish
– Steamed broccoli, for serving
Instructions:
1. In a small saucepan, combine the soy sauce, brown sugar, garlic, ginger, and mirin. Bring to a simmer over medium heat.
2. In a small bowl, mix the cornstarch and water to create a slurry. Pour the slurry into the saucepan and whisk until the sauce thickens. Remove from heat.
3. Preheat the grill or a grill pan over medium-high heat. Season the salmon fillets with salt and pepper.
4. Place the salmon fillets on the grill and brush with the teriyaki sauce. Cook for 4-5 minutes on each side, until the salmon is cooked through and nicely glazed with the sauce.
5. Serve the teriyaki salmon over cooked brown rice, with steamed broccoli on the side. Drizzle with extra teriyaki sauce and garnish with sliced green onions and sesame seeds.
